Los Corrales is a family of artisanal cheese makers. Their cheeses are made by hand with raw sheep and goat milk. They do not use additives, waxes or fungicides. Their production is small and limited. GOAT “Espadan” Soft with a fresh, lasting taste. Very varied, depending upon what the goats eat. This cheese is aged superficially. When a rind is formed, it is brushed with olive oil which gives a characteristic color which contrasts with the pure white cheese. It is a great cheese with an intense and characteristic taste.
